My goal this year is to get a bit more organized in the kitchen so we aren’t left at the last minute wondering what’s for dinner. That usually results in an expensive and unhealthy fast-food run . . . or breakfast for dinner, again.
I was inspired by a friend whose New Year’s Resolution last year was to go to the grocery only twice a month, on the 1st and the 15th. She’s stuck to it with an incredible sense of discipline, considering she’s a mom of six. I’ve organized this meal plan for January with her strategy in mind.
This meal plan covers the entire month of January with shopping lists divided by Jan 1-15 and 16-31. This way you can shop at the beginning of the month, prep your ingredients ahead of time (dice the onions, chop the potatoes, etc.) and freeze them until it’s time to cook. Some of the meals can even be made ahead and frozen so you can just pop them in the oven on busy nights.

There’s no particular diet here—just the type of warm, comforting meals I’m craving in January. These are all main dishes, so you’ll want to add some salad or green vegetables on the side to make these complete nutritious meals.
